Food Justice Team

The food justice committee created a very elaborate and alternative meals, aligned with GIN principles and philosophy. We focused on local providers, thinking about either health, social and environmental aspects. Meat is out of the groceries shopping list, but non-vegetarian people will have plenty of traditional Brazilian options to choose from (pasta, pizza, cakes, feijoada, among others) and hopefully our meals will feel special and pleasant. They will contain common ingredients like eggs and dairy, meaning they are not vegan. They will sure provide people with energy and nutrients to get through the intense conference days.

Dinner

– Tea
– Margherita pizza, palm heart pizza , and Portuguese pizza (corn, peas, onions, tomatoes, bell peppers, basil, eggs, and cheese)

Lunch

– Organic Mixed greens (from community gardening) with mango chunks, olives, toasted sunflower and passion fruit dressing (Vegan)
– Tomato salad with basil and cashew nut pesto (contains parmesan cheese)
– Local organic five bean salad with palm heart cubes, red onions, carrot and fresh herbs with olive oil and special organic vinegar (Vegan)
– Penne in fresh tomato and sweet garlic sauce (Vegan)
– Vegetable quiche with zucchini, tofu, mushrooms (with butter and eggs)
– Chickpea curry with coconut milk and spices (Vegan)
– Brazilian organic local corn Farofa with caramelized onions, lentil, green peas and carrots
– Manioc pearls with organic grape juice and hibiscus flowers, cream and molasses

Dinner
